Poached Fish
Ingredients
4 each Fish of choice, whole, cleaned
1 bunch Parsley, finely chopped
1 tsp. Salt
½ cup Water
¼ cup Olive oil
1 Lemon, juiced
Instructions
Lay the cleaned fish on the bottom of a pot. Add water, cover the lid and cook over low heat until the fish is cooked, approximately 30 minutes. Right before taking off the heat, add olive oil and lemon juice, and serve.

Fried Fish
Ingredients
1 lb. Small fish (Anchovies, horse mackerel, sardines), cleaned
Oil for frying
1 tsp. Salt
½ cup Flour
1 Lemon, cut into 4 wedges
Instructions
Heat the frying oil. Dip the fish in flour, then dust off the excess flour. Fry in hot oil until golden brown and transfer onto a paper towel. Sprinkle with salt and serve with lemon wedges.
Meyaneli Rokalı Balık
Fish with Rockets and Lemon Sauce
Ingredients
2 fillet of any white fish
4 tbsp. Olive oil
12 Whole black peppercorns
4 Bay leaves
2 tsp. Salt
4 pieces of Parchment paper (16x16 in)
For the sauce
1 tbsp. Flour
1 tbsp. Butter
½ Lemon, juiced
2 tsp. Lemon zest
½ bunch Rocket leaves, sliced
1 tsp. Salt
Instructions
Heat the oven to 480F. Lay the parchment paper on your work surface, place the fish fillets on the paper. Pour some olive oil, place one bay leaf on each fish, add salt and pepper then fold the paper into a bag. Bake in the oven for about 10 minutes until the fish are cooked. Meanwhile prepare the sauce by sautéing the flour in a dry pan, once browned add butter. When the roux forms add lemon juice, lemon zest, salt and roughly chopped rocket leaves. Stir for a few minutes, and then serve this sauce with the baked fish. You may serve boiled or sautéed potatoes with the fish.
Note: The same sauce can be used with boiled fish as well.

Fish with Tomatoes
Ingredients
2 lb. Grey mullet or bonito fish, scaled, cleaned, sliced
½ cup Olive oil
3-4 Tomatoes, peeled, cut into medium dice
½ cup Water
1 tsp. Salt
1 tsp. Black pepper
1 bunch Parsley leaves, finely chopped
Instructions
Combine the tomatoes and olive oil in a pot. Add salt and pepper, coon until the tomatoes are completely melted. Add ½ cup of water and cook for a little longer. Add the sliced fish, cover the lid and cook for about 20 minutes until the fish is fully cooked. Take off from the heat, cool slightly and serve with chopped parsley.
Balık Pilaki
Braised Fish
Ingredients
2 lb. Mackarel or bonito, cleaned, sliced
5 Yellow onions, peeled, sliced
4-5 cloves Garlic, sliced
4 Tomatoes, peeled, cut into medium dice
¼ cup olive oil
1 bunch Parsley, coarsely chopped
2 Bay leaves
2 tsp. Salt
1 tsp. Black pepper
Instructions
Sauté the onions in olive oil until softened. Take off the heat, add garlic, tomatoes, salt and black pepper, and mix well. Divide the onion mixture in two. Place one half on the bottom of a pot, then slices of fish, then top of with the rest of the onion mixture. Cover the lid, and cook over low heat until the fish is cooked, about 25-30 minutes.
