White Bean Stew with Lamb
Ingredients
2 cup White bean
½ lb. Lamb meat, from the leg, cut into medium dice (beef may be substituted)
2 tbsp. Butter
2 Onions. Finely chopped
3 Tomatoes, peeled, cut into medium dice
(or 2 tbsp. Tomato paste)
5 cups Beef stock or water
3 tsp. Salt
2 tsp. Red pepper flakes (optional)
Instructions
Soak the beans overnight. The next morning, boil the beans with a fresh batch of water until softened, about 30 minutes. Strain and set aside. Sauté the onions in butter until softened, then add the tomatoes (or tomato paste) continue sautéing. Add the lamb, cook until browned. Finally add the water and salt cook for 10 minutes, and then add the boiled beans, close the lid and cook for about 30-40 minutes until the meat is cooked and the beans have softened. Serve sprinkled with red pepper flakes with rice pilaf and pickles on the side.

Chickpeas with Lamb
Ingredients
2 cups Chickpeas
½ lb. Lamb, from the leg, cut into medium dice (beef may be substituted)
2 tbsp. Butter
2 Yellow onion, finely chopped
3 Tomatoes, peeled and cut into medium dice
(or 2 tbsp. Tomato sauce)
5 cups Beef stock or water
3 tsp. Salt
2 tsp. Black pepper (optional)

Soak the chickpeas overnight. The next morning, boil the beans with a fresh batch of water until softened, about 30 minutes.Sauté the onions in butter until softened, then add the tomatoes (or tomato paste) continue sautéing. Add the lamb, cook until browned. Finally add the water and salt cook for 10 minutes, and then add the boiled beans, close the lid and cook for about 30-40 minutes until the meat is cooked and the beans have softened. Serve sprinkled with red pepper flakes with rice pilaf and pickles on the side.

Green Lentil Stew with Ground Beef
Ingredients
2 cups Green lentils
½ lb. Ground beef
2 tbsp. Butter
2 Onions, finely minced
2 Tomatoes, peeled, cut into medium dice
(or 1 tbsp. Tomato paste)
2 ½ cup Beef stock or water
1 tsp. Black pepper
3 tsp. Salt
2 tsp. Red pepper flakes (optional)
Instructions
Soak the lentils for 2-3 hours. Boil with a fresh batch of water until softened, about 10 minutes. Sauté the onions in butter until softened, then add the tomatoes (or tomato paste) continue sautéing. Add the ground beef, salt, black pepper and sauté until the beef is cooked. Add tomatoes, when it starts to boil, add the lentils, turn down the heat and cook until the lentils have completely softened, about 25-30 minutes.

Cranberry Beans Cooked in Olive Oil
Ingredients
2 cups Dried cranberry beans
(or 1 kg. of Fresh cranberry beans, peeled)
2 Onions, finely chopped
1 Potato, cut into medium dice
1 Carrot, cut into medium dice
3-4 cloves Garlic, sliced
2 Tomatoes, peeled, cut into medium dice
(or 1 tbsp. Tomato paste)
¼ cup Olive oil
2 tsp. Salt
1 tsp. Sugar
1 bunch Parsley leaves
1 Lemon cut into 4 wedges
Instructions
If using dried cranberry beans, soak overnight. The next morning, boil the beans with a fresh batch of water until softened, about 30 minutes. Sauté the onions and garlic in olive oil until softened. Add the tomatoes or tomato paste, and continue sautéing for a few more minutes. First add the carrots, a little later add the potatoes and cranberry beans with enough water to fill the half of the pot, salt and sugar. Cook over low heat until the beans have softened, about 40 minutes. Serve with parsley leaves and lemon wedges.

Braised Black Eyed Peas with Beef
Ingredients
2 cups Dried black eyed peas (cowpeas)
½ lb. Beef, cut into medium dice
2 tbsp. Butter
2 Yellow onion, finely chopped
2 Tomatoes, peeled, cut into medium dice
(or 1 tbsp. Tomato paste)
2 ½ Beef stock or water
1 tsp. Black pepper
3 tsp. Salt
Instructions
Soak the peas overnight. The next morning, boil the peas with a fresh batch of water until softened, about 20 minutes. In a pot, sauté the onions in butter until softened. (If using tomato paste, add at this stage). Add the beef, salt and black pepper cook until the beef is browned. Add tomatoes and cook for about 5 minutes, then lower the heat and simmer until the peas are completely softened, for about 25-30 minutes.
