Pinto Beans with Olive Oil
Zeytinyağlı Barbunya
Ingredients:
2 c dry pinto beans or 500 gr fresh
(cranberry beans)
2 onions, minced
1 potato, cubed
1 carrot, cubed
3-4 cloves garlic, minced
1 T tomato paste
Salt to taste
1 cube sugar
½ c olive oil
1 T parsley
If using dry beans, put them on to soak the night before. Sauté the onions in the oil, add the carrot and potato and fry for another minute. Add tomato paste and stir a minute or two more. Add the beans, salt, sugar and garlic, and enough water to cover. Cook till beans are tender and water has mostly been absorbed. Serve cold topped with chopped parsley.White

Chickpeas with Meat

Ingredients:
300 gr chickpeas
500 gr coarsely chopped meat
4-5 T vegetable oil
2 T pepper and tomato paste
2 onions
2-3 tomatoes
2-3 sivri peppers (2 anaheims of 1 large green pepper may be substituted)
Salt to taste
The same as for white beans, substituting chickpeas.

Blackeyed Peas with Meat
Etli Börülce
Ingredients:
300 gr blackeyed peas
500 gr coarsely chopped meat
4-5 T vegetable oil
2 T pepper and tomato paste
2 onions
Salt to taste
Proceed as with white beans above.

Zeytinyağlı Kuru Bakla Ezmesi
Ingredients:
500 gr dry fava beans (hulled)
2 onions
3-4 cups water
1 c olive oil
Salt, sugar
Juice of 1 lemon
Soak the broad beans the night before.
Mince the onions and sauté in oil until they are transparent. Add 3-4 cups of water (start with 3 and add more as necessary) and bring to a boil. Add the soaked broad beans and oil, and simmer until they have disintegrated, stirring frequently towards the end to avoid scorching. Add salt, lemon juice and sugar if desired. Chill and serve in squares with olive oil and a squeeze of lemon. You may also garnish it with dill and chopped fresh onion.

Beans with Meat
Etli Kurufasulye
Ingredients:
300 gr white beans
500 gr coarsely chopped meat
4-5 T vegetable oil
2 T pepper and tomato paste
2 onions
2-3 tomatoes
2-3 sivri peppers (2 anaheims of 1 large green pepper may be substituted)
Salt to taste
Soak the beans overnight and boil till done, drain. Mince onion and sauté with the meat in the oil until the meat is tender. Mince the peppers and sauté with the onions. Add the tomato and pepper pastes. You may add 1 T flour at this point to make the finished dish thicker. Add the cubed tomatoes and salt, add to the beans and enough water to just cover, and simmer. |
