Patatesli Dizi Köfte
“Arranged” Köfte with Potatoes
Ingredients:
300 gr ground beef
1 slice stale bread, crusts removed
1 small onion, grated
2 cloves garlic, crushed
Salt, pepper, cumin, thyme
3 medium potatoes, cut as for frying
¼ c olive oil
1 t tomato paste
3 “sivri” pepper (or Anaheim), split
2 tomatoes, grated
Combine ground beef, bread, onion, garlic and salt and spices to taste, and knead well. Form into flat round croquettes.
Pour half the olive oil into a wide shallow pan with a cover, and spread, then arrange the flat meatballs over it. Arrange the potatoes over the meatballs, place the pepper on top, and pour the grated tomatoes evenly over the top. Add salt and remaining olive oil, cover and cook on medium heat. Just before the potatoes have completely softened, combine the tomato paste with half a cup of hot water and 1 t thyme, and pour around the pan. Continue cooking until the potatoes are tender.

Hasanpaşa Köftesi
Ingredients:
500 gr ground meat
1 onion, grated
2 slices dry bread, crusts removed
3 eggs
Salt, pepper
For Potato Puree:
3-4 potatoes
2-3 T butter
½ c milk
1 egg
Salt to taste
2 T tomato paste
Wet bread, squeeze out extra water, mix with the meat, onion, salt, pepper and eggs. Form in to egg-size ovals push the middle to give them a slight “bowl” shape, and arrange in a baking pan. Drizzle a bit of oil over the köfte and bake for 20-25 minutes. Meanwhile, boil potatoes till tender, drain, and mash. Add 1 T of butter, 1 egg, milk and salt, and cook on low heat, stirring constantly, for 5 minutes. Take spoons of the puree and fill the köfte in the pan. Mix 2 T of tomato paste with 1 c water and pour around the pan. Bake in a medium oven until the potatoes have browned; remove and serve.

Sade Köfte
Plain Köfte
Ingredients:
500 gr medium fatty ground beef
1 large onion, grated
2 slices of stale bread, crusts removed
1 egg
Salt and pepper to taste
Oil for frying.
Mix all ingredients except the oil, shape into small flat ovals and fry in hot oil, serve with fried potatoes.

Buğu Kebabı
Steamed Kebab
Ingredients:
1 kg lamb, thigh meat
½ k pearl onions
2-3 T butter
2-3 tomatoes, grated
Salt, pepper and thyme
Cut the meat into small pieces. Put all the ingredients into a pressure cooker with just enough water to cover, and cook at medium until meat is done, about 25 minutes.
